Product Notes: Located in the Yirgacheffe region of Ethiopia, and carefully crafted by the team at Ninety Plus, Kemgin is the only traditionally “washed” coffee in the Ninety Plus lineup. In order to create this clean and complex coffee, cherry selection, cherry handling, clean water and controlled fermentation times all played vital roles on the final end product of this beautiful coffee. After careful selection, cherries are soaked for around 36 hours in closed tanks and then soaked for an additional 12 hours in another installment of clean water. From there, they dry their coffees at the wet mill rather than on traditional raised beds, allowing for more control. The results of their methods have led to a particularly clean, crisp and unique flavor that is vastly different than many other coffees from the same region.
